Chopped vegetables and spices marinating in ziplock bag.
In zip lock bag place:
1 onion sliced thin
1 red, green, yellow bell pepper sliced thin
juice from 1 or 2 fresh limes
2 Tablespoons chopped fresh cilantro1 onion sliced thin
1 red, green, yellow bell pepper sliced thin
juice from 1 or 2 fresh limes
1 crushed clove garlic
1 to 2 teas cumin
3 Tablespoons olive oil
Let marinate all day or as long as you have time before dinner
salt. Use 1/2 avocado per fajita. Slice avocado and place in gluten
free tortilla. Top with sauteed vegetables and salsa.
Tonight for dinner I'm making Avocado Fajitas. Our health food store sells Spelt Tortillas-they taste great and are gluten free.free tortilla. Top with sauteed vegetables and salsa.
Breakfast is one of my favorite meals of the day and it is amazing how long a plate of fruit can keep you full. Today we had blueberries, grapes, cantaloupe, and strawberries.

I made these fajitas on Wednesday and they were soooo good! Definately is going to become a regular at our home :)
